Soy went from being seen as the #1 nutritious substance, to something that many people now avoid entirely. The concern is that much, almost 90%, of the soy is genetically modified, which may pose its own health risks. However, not all soy is bad. There are two different forms of soy, fermented and unfermented. It’s the unfermented soy, such as soy milk, soy beans, and tofu, that concern most people and is linked to digestive problems, immune disruption, and even thyroid dysfunction. However, organic and properly fermented soy, such as miso, tempheh and natto, have great health benefits and been shown to prevent and reduce many health conditions (e.g. positive effects on heart health and even cancer).
